The olive groves are located in Cassano delle Murge (Puglia), the kingdom of Coratina. For years the company has been practicing organic farming to produce BIO certified extra virgin olive oil.

"Alfonso Parisi" Olive Oil
The organic farm “Alfonso Parisi” was founded in the twenties as an agro-olive farm. Today it is a modern company that markets only high quality products and whose flagship is the extra virgin olive oil from organic cultivation. The olive groves are located in Calabria on the gentle slopes of the Presiliane hills.
Extra virgin olive oil of superior category obtained directly from olives and only by mechanical processes and cold extraction that allows to maintain intact the nutritional quality of the product.
The oil extracted from the Dolce di Rossano olive is slightly dense and green in color with a strong but never intrusive and slightly spicy flavor when young and fresh, becoming over time a golden color with a delicate and slightly fruity aroma and taste. It accompanies any dish.

This hot pepper contains 15,000 SU (Scoville Unit), three times more than the normal Italian hot pepper. Its spicy flavor is not intrusive, however, but moderate. It is often used for preserves and aromatization as a small quantity is enough to give the right hot taste to any dish.
